I’ve never really liked lengua, but this looks really good and I’m definitley rethinking my taste. Also, I’ve really only had it the way my grandma makes it, which involves coating it in an egg batter, so I think I’ll try these.

@santi781 Have you ever eaten a hottdog? well those are meats that come from cows,Pigs,and sometimes chickens. it’s the cartiladge left over from the nose, ears, the anus, head, feed, knee joints, and sometimes baby fetuses. It’s all ground in a big machine and whats addes is a few preservatives and spices, and There you go, a hotdog.
@santi781 Taste better than any other part of animal, It’s like pork basically but better. give it a try, most places offer tongue as a meat. Give it a bite and see if it suites you.

Tnxs 4 posting this! I’ve bought tongue from a farm shop (in Scotland) on a whim with no idea what 2 do with it! I believe if we eat meat we should eat as much of the animal as we can -min waste is ethical. We’r 2 squeemish & take choice cuts of meat n bin the rest. I’ll follow ur recipe n if I like it I will order tongue from a place I usually order from, they’re ‘seasonal, sustainable and traceable’ sound a bit like u. also tacos de la cabeza are good but if you get a tostada or burrito de la cabeza the chunks of head are very strong so if you get taocs and not anything else de cabeza
@bradyischamp its totaly amazing though im half mexican and my friend Favian (who is full mexican and his parents are from mexico) his family owns most of the taco trucks in town and they introduce me to mexican culture and they gave me sum tougne tacos THEY ARE AMAZING u really should try them
